Bean to Bar Course in Italian FBM Area

Dates: 1-2-3 March.

Hours: 9.30am – 5.30pm (with lunch break).

Headquarters: FBM Srl in Via Machiavelli 15/17 a Legnano (MI).


-Day 1:
selection of cocoa beans, roasting, cleaning/cracking with Ninja Bean to have cocoa nibs. Pre-grinding with Grindgo to get 80/100 microns cocoa liquor, grinding nibs with Rumbo.

-Day 2:
grinding sugar, focus on different roasting profiles, conching cocoa liquor with Kleego.

-Day 3:
tests of different conching stages, tempering, molding, crystallization, wrapping chocolate bars.

Cost: € 250 (IVA included) per person (lunch meals included).
