RUMBO MAX is the evolution of our iconic Rumbo "melanger," used by more than 1,000 artisanal chocolate makers worldwide. RUMBO MAX revives the traditional stone-milling concept, using a granite base and millstones to guarantee chocolate with an authentic, artisanal profile.
The process combines the natural friction of the millstones with forced hot air (up to 75°C), which can be activated before or during processing. This method allows cocoa nibs or cocoa mass to be refined to an impalpable consistency. Adding sugar and cocoa butter completes the recipe without stressing the raw material, giving the final product excellent plasticity and fluidity. RUMBO MAX is a large-scale mill also perfect for cold-ground spreads, pralines, and premium quality gelato bases. The technological innovation also includes a new rapid product emptying system via a compressed air connection and a rear lifting piston.
