TEMPERING ENROBING MACHINE

The machine is controlled by an electronic board which allows to set the heating and tempering temperatures, the automatic turning on and off and the “night cycle” feature.
The continuous tempering technology has two separate systems:
Heating in a closed circuit by liquid (water + food glycol) and pre-crystallization by gas R 404 which allows short times in reaching the set temperature.

The computer allows to select different crystallization curves according the kind of chocolate used (black, milk, white). Moreover it is possible to set two different tempering process (when allowed by the kind of chocolate used): fast cycle and soft cycle.
The chocolate colour change and the reduction of wastes are granted by the possibility to reverse the turning sense of the screw and the possibility to take it off for cleaning.

The machine is equipped with vibrating table heated with resistances.

The electronic enrobing belt is divided in two parts, equipped with inox belt 300 mm wide, movement and stop by pedal with net stand-by for a few seconds, blocks for placing of the paper roll, tail-reducer and heated bottom coating basin to avoid chocolate solidification.
